1 eggplant, sliced
3 gloves garlic, skin left on but tips cut off
1 medium zucchini, sliced
2 big tomatoes, cut into wedges
1 medium red onion, cut into wedges
1 tsp dried Herbs de Provence
1/2 green chilli, chopped (or less if you prefer)
3 ½ fl oz olive oil
Fresh lemon juice
7oz feta cheese, crumbled
Preheat the oven to 400 degrees Fahrenheit.
Place all the vegetables and chilli in a roasting pan. Stir in the herbs and olive oil. Bake in the oven for about 30 minutes, stirring occasionally. Discard garlic.
Add a squeeze of lemon juice and sprinkle the crumbled feta cheese on top. Place under a grill for a few minutes until cheese begins to soften.
