Recipe – Quick Chili Shrimp Pasta

Healthy Recipe

This healthy quick pasta recipe is low fat and low GI.

2 cups of cooked, peeled, and ready to eat shrimp
1 clove garlic crushed
1 Tbsp de-seeded and chopped chili
1 Tbsp olive oil
Juice of one lemon
Fresh chopped parsley to garnish
Salt and pepper to taste
Whole wheat spaghetti for four

Cook and drain the spaghetti according to package instructions and set aside.

Heat the olive oil in a non stick pan and add the garlic and chili, stir over low heat for approximately 1 minute. Add the lemon juice and shrimp and heat through for a minute or so. Toss the mixture and spaghetti together, add salt and pepper to taste and garnish with a little parsley and serve.

Recipe – Orange Creamed Carrot Soup

Healthy Recipe

This healthy and delicious soup recipe is low fat.

2 tablespoons of olive oil
3 leeks washed and sliced
1 lb carrots, washed, peeled and sliced
5 cups of vegetable stock
Juice of two oranges
Finely grated rind of two oranges
2/3 cup of plain low fat yogurt
Salt and pepper to taste
Chopped flat leaf cilantro to garnish

Place the olive oil in a pan and add the leeks and carrots, stir well until coated with oil. Cover, and cook over low heat for approximately 8 to 10 minutes, or until the vegetables start to soften (don’t let them discolor). Pour the vegetable stock, orange juice, and orange rind over the veggies. Season with salt and pepper to taste.

Bring to a boil, then lower heat and cover. Simmer for approximately 40 minute or until the veggies are fork tender. Let the soup cool a little then transfer to a food processor or blender. Blend until smooth. Return soup to pan and add 2 tablespoons of the yogurt. Reheat gently taking care not to let soup boil.

Serve the soup in warm bowls and place a swirl of yogurt and garnish of fresh, flat leaf cilantro leaves and swirled orange peel slivers on the center of each bowl.

Recipe – Orange and Cashew Couscous Salad

Healthy Recipe

This healthy delicious salad recipe is low fat and low GI.

For the Salad:

8 oz of apple juice
6 oz of couscous (dried)
1/2 red pepper, cored, seeded, and diced
4 Tbsp chopped fresh parsley
2 Tbsp chopped fresh mint
1 oz of raisins
2 oranges peeled, deseeded and cut into segments
1 oz of cashew nuts

Dressing:

Juice of 1 orange
Juice of 1 lemon
2 teaspoons olive or walnut oil
1 teaspoon honey

Place the apple juice in a saucepan and bring to a boil. Slowly stir in the couscous and remove from heat. Cover and let stand for 7 to 10 minutes until liquid is absorbed. Fluff with fork. Add the herbs, raisins and peppers and orange segments. Gently toss together. Transfer to serving bowl.

For the dressing, place the ingredients in a saucepan and gently heat until the honey is dissolved. Do not bring to a boil. Drizzle dressing over the salad and garnish with cashew nuts.

Recipe – Mushroom Omelet

Healthy Low GI Recipe

This healthy mushroom omelet recipe is great for a low GI diet and a low carb diet.

1 cup of trimmed and sliced mushrooms
8 large eggs
2 oz grated Gruyere or Swiss cheese
2 tablespoons butter
Fresh parsley to garnish
Salt and pepper to taste

Add one tablespoon butter to a non-stick frying pan and add the mushrooms. Sautee over low heat for approximately 5 minutes, remove mushrooms from pan and set aside. Add a little more butter to the pan and add one quarter of beaten egg mixture, lift the edges of the omelets so the egg can run under and set. Once the omelets is almost set add one quarter of the cooked mushrooms and sprinkle with a little bit of the cheese. Fold the omelets over and gently place on the serving plate. Repeat 3 more times with remaining ingredients.

Serves 4

Recipe – Low Fat Chicken Caesar Pita Pockets

I made this yummy low fat chicken recipe up recently. My whole family enjoyed it and I enjoyed the fact that it was not so bad for the flab fighting I am currently engaged in! Enjoy!

1 large cooked chicken breast, shredded
1 small bell pepper, slices
1/4 small red onion, sliced
10 black olives, sliced
1/2 cucumber, sliced thinly
8 romaine lettuce leaves
4 pita rounds cut in half

Spread low fat Caesar dressing (recipe below) on the insides of pita halves. The stuff with one lettuce leaf, a few shreds of chicken breast, a couple pepper slices, two or three slices of cucumber, a few onion slivers and black olives. Drizzle with a little dressing before serving.

Low Fat Caesar Dressing

2 parts low fat mayo
1 part low fat/fat free Caesar vinaigrette
1/2 tsp paprika
1/4 tsp Greek seasoning
cracked pepper to taste
salt to taste

Serves 4 (each person gets two pita halves)

Recipe – Grilled Eggplant and Mozzarella Rolls

Healthy Low GI Recipe

This healthy recipe is good for a low GI diet and a low carb diet.

1 large eggplant
3 tablespoons olive oil
1 mozzarella cheese ball, cut into 8 slices
2 plum tomatoes, each cut into 4 slices
8 large basil leaves
Salt and black pepper
Balsamic vinegar for drizzling (optional)

Cut the eggplant lengthwise to make 10 thin slices, discard the two outermost slices. Sprinkle the slices with salt and leave for 20 minutes. Rise and pat dry with paper towels. This process helps get rid of the bitter taste.

Place the eggplant slices on a non stick baking try and brush with olive oil. Place under a hot grill for approximately 10 minutes or until golden and tender. Turn once halfway through grilling.

Remove the eggplant slices from grill but leave in baking tray. Place one slice of mozzarella, tomato and basil leaf in the center of each eggplant slice. Fold each end of the eggplant slice over towards the middle. Grill the slices seam side down for approximately 2 minutes or until heated through and mozzarella begins to melt. Drizzle with a little balsamic vinegar if using and serve.

Recipe – Catfish Lettuce Wraps

Healthy Fish Recipe

Note: you can substitute the catfish for any white fish that you like.

6 large lettuce
1 medium carrot, shredded
1 small zucchini, shredded
1 1/2 pounds fresh catfish fillets, cut into 6 serving pieces
1 teaspoon dried marjoram leaves
Salt and pepper to taste
1 tablespoon unsalted butter

Wilt lettuce leaves. Placing in hot water for 1 minute can do this. You will see the lettuce leaves start to droop. Be sure to drain the leaves well after removing from water. Place lettuce leaves flat. Take a small portion (enough to cover lettuce leaf) of veggies and place in single layer in leaf leaving edges clear. Place a piece of catfish on top of the veggies. Add marjoram, salt and pepper taste. Put a small portion of butter on top. Fold leaf around veggies and catfish. Place in a large baking dish seam side down. Continue until all ingredients are used. Cover dish with aluminum foil. Place in a preheated 400 degree oven and bake approximately 30 minutes.

Recipe – Banana and Raisin Tea Cake

Healthy Low Fat Recipe

This is a low fat sweet banana bread that can also be called a tea cake. It’s delicious spread with a little butter and all fruit jam.

3 oz melted unsaturated margarine
8 oz whole wheat flour
1 teaspoon cinnamon
3 oz brown sugar
3 – 4 very ripe bananas, mashed
3 oz raisins
2 eggs lightly beaten
2 teaspoons baking powder
1 teaspoon baking soda
Dash of salt

Lightly grease a loaf tin and set aside. Melt the butter or margarine in a saucepan and set aside. Sift the flour, baking powder and baking soda in a large bowl. Add the cinnamon. In a separate bowl mix the eggs, butter and sugar. Add butter mixture to flour mixture. Stir in raisins and mashed banana.

Spoon the mixture into the prepared loaf tin and bake at 350F for approximately 45 minutes or until golden and baked through. Turn over to wire rack to cool.
