Party Recipes – Labor Day 2008
Well, Labor day is almost here and with it the final pool parties and cook outs before fall comes. So, I am posting some great recipes to take to your Labor Day party. Enjoy!
Cheesy Cheddar Dip
1 package of cream cheese softened
1 cup sharp cheddar cheese
1/2 cup of low fat mayonnaise
1/2 cup chopped cooked bacon
1/4 chopped chives
1 small diced plum tomato
Salt and pepper to taste
Preheat oven to 350 F. In a large mixing bowl combine the cream cheese, cheddar cheese, and mayo. After that is well mixed, add the bacon, chives, tomato, and salt & pepper. Spread mixture into an ungreased 8×8 baking dish. Bake until cheese has melted thoroughly. Serve with your favorite crackers.

Ring of Yum
3/4 lb ground chicken or turkey
1 package taco seasoning mix
1 cup medium or sharp shredded cheddar cheese
2 tablespoons water
2 (8 ounce) packages refrigerated crescent dinner rolls
1 cup mild salsa
3 cups romaine lettuce, shredded
1 medium tomato, diced
1/4 cup white onions, chopped
1/2 cup pitted black olives, chopped
1 cup sour cream
1 cup mild salsa
Preheat oven to 375F. Cook ground chicken or turkey in large pan over medium heat until thoroughly cooked. Remove from heat. Add taco seasoning mix,cheese and water to the ground chicken or turkey. Spray pizza pan with non stick spray. Open cresent rolls and seperateinto triangles. Place in a circle on pizza pan with wide ends overlapping and points pointing up. Leave a 5 inch opening in center. Spoon ground chicken or turkey mixture onto widest end of each triangle. Fold the top of the triangles over mixture and tuck under and pinch together. Ground chicken or turkey mixture will not be entirely covered by the triangles. Bake 20 minutes or until golden brown. Once the ring is finished cooking, top with lettuce, tomato, onion, olives, more cheddar cheese, sour cream, and/or salsa and serve.

Summer Squash Casserole
1 red onion, sliced
1 red bell pepper, cut in thin strips
2 medium zucchini, sliced & unpeeled
2 medium yellow squash, sliced & unpeeled
1, 16 oz. can diced tomatoes, undrained
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon basil
1 tablespoon butter
1/4 cup grated Parmesan cheese
Combine all the ingredients, excluding the cheese and margarine, in a slow cooker. Cook on a low setting for 3 hours. Add the margarine and sprinkle the cheese on top. Cook for another 1 1/2 hours on the low setting.
