Reducing Acidity in Tomato Sauce
I grew up with an Italian Mother. One positive thing I can say about her is that she was a good cook. She gave me a love for cooking and Italian food. However, we do things very differently. I am always looking for a healthy way to do it. Many people, my husband included, suffer from heart burn after eating something with tomato sauce. Now, some Italians use sugar or wine. I do not like either in my sauce. So, I peel a large baking potato and cook place it in the made sauce to cook with it for about an hour. It reduces the acidity. How do I know? Well, since I started doing it, my husband does not get heartburn when I make a dish using my homemade tomato sauce. :)
