Speedy Aubergine Stir-Fry
Serves 4
2 tbsp vegetable oil
1 aubergine, sliced
2 spring onions, sliced diagonally
2 tbsp oyster sauce
1 garlic clove, crushed
1 small red bell pepper, thinly sliced
1 tbsp Chinese fermented black beans (sold in plastic bags from Asian markets)
Fresh parsley or coriander, chopped
Black pepper
Heat the vegetable oil in a wok. Add the aubergine slices and sauté for a few minutes, then add the onions, garlic and season with pepper. Cook for a further few minutes. Stir in the oyster sauce, black beans and red bell pepper. Sauté for a minute until hot. If necessary, season again with pepper, sprinkle with coriander or parsley and serve immediately with a bowl of rice.
