Serves 2 Ingredients: 1 cup coconut milk 1 tbsp maple syrup ½ cup pineapple juice (or half 15oz can of pineapple chunks) 1 banana 1 tbsp heavy cream Ice cubes Combine all ingredients in a blender and blend until smooth. This is a delicious and refreshing smoothie with a Hawaiian twist.

Serves 2 Ingredients: ½ small cucumber, finely diced ½ green pepper, finely diced 1 scallion, finely chopped 1 tbsp lemon juice 1 tbsp olive oil ½ tsp soy sauce Bunch of fresh parsley, finely chopped Combine all ingredients in a bowl.
