To all of you who struggle with making a consistently perfect cookie, today I am introducing you to my perfect solution: Chocolate Chip Cookie Bars. Maybe you've made them before, but if you haven't, and if you find yourself resorting to break-n-bake cookies when yours fall flat, these chocolate chip cookie bars will be a dream. Cookies seem to mark my childhood memories. One of my earliest memories is helping my mom pour in sugar and flour and chocolate chips and getting to lick the bowl (raw eggs and all). And sadly, I think I've passed the tradition on to my own daughter. She knows to ask, "does this dough have raw egg in it?" Because occasionally I'll make a batch just for eating, where we substitute the eggs with applesauce or Greek yogurt. I should feel bad about it, but I don't. Life is short. Easter Sugar Cookies
1 1/2 cups margarine or butter, softened 1 tsp vanilla extra ¼ tsp salt 1 cup powdered sugar 2 3/4 cups all-purpose flour, sifted Food Coloring (optional) With an electric mixer, beat sugar, butter and salt until creamy. Then beat in the vanilla extract. If you want to make your cookies pretty pastel colors, this is when you would ad 1-3 drops of food coloring. You will only want to use one color per batch, unless you want to split batch. :) Mix well. Slowly add the sifted flour and beat with a wooden spoon until well blended. Cut dough in half. Flatten each half and wrap with plastic wrap. Refrigerate for at least 2 hours or overnight. When you are ready to make and bake the cookies... Heat oven to 350° F. On a floured surface, roll one half of the dough to about ¼" thickness and cut out your favorite Easter shapes. Arrange the shapes on an ungreased baking sheet and chill about for about 15 minutes. Holiday Mixed Nut Cookies
Yields about 5 dozens Ingredients: 1 cup butter or margarine, softened 1 tsp + 1 tsp vanilla extract 1 cup + 1/2 cup confectioners’ sugar 1 ¾ cups flour, sifted ¼ cup pecans, chopped ¼ cup almonds, chopped ¼ cup hazelnuts, chopped ¼ tsp salt Note: you can replace any of the nuts listed with some of your own favorites. However, to keep with the mixed nut theme, try and make it at least 3 differernt nuts. Instructions: Preheat oven to 300 degrees Fahrenheit. Cream butter with an electric mixer. Add ½ cup sugar and mix until well blended. Stir in the flour, nuts, salt and vanilla extract and combine well. Drop 1 spoonful of mixture for each cookie onto a greased baking sheet and bake in the oven for about 20 minutes. In the meantime, combine 1 cup of sugar and 1 tsp vanilla and place onto a shallow dish. Coat each side of the warm cookies with the mixture and set aside to cool.
