Citrus Fruit Soda Recipe

1 cup honeydew melon balls
1 cup whole strawberries cut in half
1/2 cup red seedless grapes
4 cups lemon lime soda
4 cups white grape juice

Place the fruit on skewers.  Place in a flat pan.  Place in the refrigerator until very cold.  Place the lemon lime soda in a large pitcher.  Pour the grape juice in with the soda and stir to mix together.  Pour the juice into a tall glass.  Place the fruit skewers into the juice mixture.  Serve.

Summer Colors Pineapple Slaw

1 head of cabbage, shredded
1 orange bell pepper, sliced in strips
1 large tomato, cut in wedges
1/2 fresh pineapple, diced
1 teaspoon salt
1/8 teaspoon pepper
1 cup plain low fat yogurt
2 tablespoons sour cream
2 tablespoons milk

Place the cabbage in a large bowl.  Add the bell peppers, tomatoes and pineapple.  Toss together well.  Sprinkle in the salt and pepper and toss one more time to incorporate.  Place yogurt in a mixing bowl.  Add the sour cream and stir a couple of times to incorporate.  Place the milk into the mixture.  Use an electric mixer on low speed to blend together.  When finished you should have a heavy cream.  Pour enough dressing over the salad to give it a creamy consistency.  Allow to set 5 minutes before serving.

Summer Chicken Melon Pasta Salad

1 cup mayonnaise
1/4 cup fresh OJ
4 chicken breasts, boneless, skinless and thawed
2 cup penne pasta
1 honeydew melon, diced

Place the mayonnaise into a large mixing bowl.  Add the orange juice and mix together well being sure that the mixture becomes very smooth.  Cover and place in the refrigerator until ready to serve.  Set the oven on 375 degrees.  Place the chicken breast in a shallow baking pan.  Bake 25 minutes.  Chicken will be done when juices run clear when pierced with a fork.  Remove from the oven and allow cooling.  Once the chicken has cooled enough to work with, use a sharp knife to dice it into small chunks.  Cook the pasta as directed on the package.  Rinse with cool water and drain well.  Place the pasta into a large serving bowl.  Add the diced chicken and blend well.  Remove the orange juice mixture from the refrigerator and pour over the top of the pasta and chicken.  Use a rubber spatula to stir the ingredients together.  Add the melon and stir to incorporate.  Cover and refrigerate for up to 3 hours.  Salad should be cold when served.
