Christmas Breakfast French Toast

1/2 cup water
1 cup sugar
1 tsp fresh lemon zest
4 cups pears, peeled, cored and sliced (you can use peaches or another favorite fruit if you like)
3 large eggs
2 cups whole milk
additional 1/2 cup sugar
3/4 tsp ground cinnamon
1/8 tsp fresh nutmeg
2 tsp pure bourbon vanilla extract
12 slices thick sliced bread, slightly stale (french or sour dough works great!)

Fruit Syrup:

Put the water, sugar and lemon zest in a sauce pan.  Bring to a rapid boil.  Turn the heat to low when it begins to boil. Continue cooking for about 5 minutes.  Sauce will thicken.  Add fruit and cook another 7-10 minutes, or until fruit is tender.  Remove fruit from mixture. Set aside.

Cook mixture over medium high heat for 5 minutes.  Remove from heat and pour mixture over fruit.  Cover and set aside.

French Toast

Lightly mix eggs. Add to large mixing bowl. Add the following; milk, sugar, cinnamon, nutmeg and vanilla to the eggs.  Whisk well.

Spray pan with Non Stick Spray. Heat  to medium high or until a drop of water sizzles when added.

Coat slice of bread with egg mixture.  Cook in hot pan for about 3-5 minutes on each side, til golden brown. Repeat for the rest of your bread. Top with butter and fruit syrup you just made. YOu can also add some whipped cream if you wish and fresh fruit on the side. YUM!
