Week Three

OK, still did not do everything I wanted…however, I did work out two days and manage to lose 1 pound! LOL!

I drank lots of water and did wii fit for about 20 minutes two days.

I also ate well for the first part of my week, but slipped just before the finish line. LOL!

Hoping for two pounds dropped this next week!

    Hey Lara,

    Good for you on the 1 pound. :)

    However, I gained 1/2 pound! It wasn’t a good week! :( I think it was water though. And I did not drink the water that I should have. I need to fill a big pitcher of water every morning and drink it!

    Sunday is my grandson’s baptism and I am having the big dinner at my house with all kinds of goodies, so that should be interesting. I know, excuses…excuses. LOL

    I will send lots of those leftovers home with guests. I don’t want them here! Pray for me this time. ;)

    I have been eating much healthier since last Saturday and have actually dropped 6 pounds this week! Lots of chicken, brown rice and veggies. I have also been eating greek yogurt for breakfast and bringing fruit and nuts to snack onthroughout the day at work. Turkey sandwich on wheat with spinach leaves for lunch everyday. It gets old but its the easiest way for me to stay on track. Here’s a healthy and delicious recipe:

    1 tablespoon extra virgin olive oil
    5 boneless skinless chicken thighs
    1/2 onion (cut into long strips)
    1/2 bellpepper (also cut into long strips)
    fresh garlic – diced (i love garlic so I put a good bit, you can choose how much you add)
    1/2 cup – 3/4 cup of teriyaki sauce
    1 cup jasmine brown rice
    1 3/4 cup water
    salt
    pepper

    Bring 1 3/4 cup water to a boil, season with about 1/4 tsp salt. Add brown rice and bring to a simmer. Cover and cook for about an hour.

    When rice is almost finished cooking, heat oil in skillet and add chicken when hot. Season chicken with salt and pepper. When chicken is just cooked through add your cut up veggies and let cook for about 5 minutes on med heat. After 5 minutes add teriyaki sauce and let simmer for 2-3 minutes. Teriyaki sauce should just coat chicken and veggies…it really shouldn’t create a lot of liquid.

    Serve over the brown rice. Yummy and healthy and the Jasmine brown rice is delicious! Even my 2 year old loves this!

    Congrats on the 6 pounds. However, that’s fast for one week…losing 6 pounds!

    Thanks for the recipe. We had our grandson’s baptism yesterday (Sunday) and my DIL’s mom brought a delicious spinach and fruit salad that I will be sharing on my Grandma blog soon. :)

    I forgot to weigh myself this morning! It was also hard to watch what I ate yesterday! :( A lot of family and friends brought so many goodies. But I did manage to get rid of most of the leftovers. lol

    I’ll post another progress report next week. :)
