Easy to Make Mother’s Day Cakes

Moms are like most people. They get pleasure from a treat now and then. You can put together one of these easy to make Mother’s Day cakes for Mom and everyone else in the family to enjoy.

This cake doesn’t even require baking. How easy is that? In fact, it’s so easy even the children can make it.

Ingredients:

* 1 pre-made pound cake (10 ¾ ounces)
* 1 box (3 1/8 ounces) instant pudding in Mom’s favorite flavor
* 1 cup whipped topping
* Fruit of choice (bananas and strawberries are good choices)
* Chilled chocolate syrup

Instructions:

Begin by cutting the pound cake into several horizontal slices of about an inch thick each. Make the pudding according to the directions on the box and then mix in the whipped topping. Chop up the fruit in slices.

Place a layer of cake in the bottom of a glass loaf pan. Put a layer of fruit over the cake and then spoon some pudding over the fruit. Continue layering the cake, fruit and pudding mixture until the final layer of cake is placed. Finish by spreading pudding over the top of the cake.

Cover the cake loosely and then place it in the refrigerator for several hours. Decorate the cake with “Happy Mother’s Day” written in frosting and add some extra sliced strawberries or candy on top. When you serve the cake, squeeze chilled chocolate syrup over the cake. Enjoy!

This next cake is called a “Granny cake” but Mom will love it, too!

Ingredients:

* 3 cups all-purpose flour
* 2 cups granulated sugar
* 1 teaspoon baking soda
* 1 teaspoon ground nutmeg
* ½ teaspoon salt
* ½ teaspoon ground gloves
* ¾ cup softened butter
* 2 cups mashed ripe bananas (about 6)
* 1 8-ounce can crushed pineapple (undrained)
* 3 eggs
* 2 teaspoons vanilla
* 1 cup finely chopped pecans
* Powdered sugar (optional)

Instructions:

Begin by greasing and flouring a 10-inch fluted tube pan and set it aside. Stir together the flour, sugar, baking soda, nutmeg, salt and cloves in a medium mixing bowl. Set this aside also.

In a large mixing bowl, beat the butter for 30 seconds with an electric mixer set on medium. Add the bananas, pineapple, eggs and vanilla and beat until well combined. Add the flour mixture and beat on low speed until it’s combined. Then beat the mixture on medium speed for 1 minute. Finish by folding in the chopped pecans. Spread in the prepared pan.

Bake the cake for 70 to 75 minutes in an oven set to 325 degrees Fahrenheit. The cake is finished baking when a toothpick inserted in the center of the cake comes out clean. Allow the cake to cool completely on a wire rack for 10 minutes before you remove it from the pan. Cool thoroughly and then sift powdered sugar over the cake to serve, if desired.
