Freezer Cookie Dough Bites Recipe
I used to really love frozen yogurt. Not so much the yogurt, but more the idea of being able to endlessly top my fro-yo with anything sugary and sweet, especially freezer cookie dough bites. Somehow, the bite sized pieces seem pretty harmless compared to their oversized counterpart of an actual chocolate chip cookie. I decided yesterday to try my hand at making my own cookie dough bites. On my first attempt, I nailed it. I came up with this recipe, but I’m sure that there are similar recipes on the internet that produce nearly the same result: a delicious, far less “guilty” pleasure. I don’t know why I haven’t tried this before, because my husband is a cookie addict and I’ve been known to have a freezer of frozen cookie dough when I go home to Texas for a week so he can make his own nightly dessert. Frozen cookie dough has a luster all its own, and for those that haven’t tried it, now is your time!
Yesterday I threw my daughter a little birthday party, and we featured a very relaxed ice cream sundae bar. For those of you moms who can color coordinate and delight in the details, I celebrate you. I am not like you. I panic at the word at plan, and I love throwing stuff together last minute. Thus a last minute hodgepodge of a sundae bar is right up my alley. I broke up candy bars, double stuffed Oreo’s in little bowls, and had a huge pile of rainbow sprinkles, caramel and hot fudge, and last minute decided cookie dough bites needed to be in the equation. The bites were the hit of the party, and so addicting that I begged a friend to take the leftovers home with her, because she is a toothpick and can afford to take them.
I think what I like most about these freezer cookie dough bites is their versatility. Sometimes all I need after dinner is a quick little bite of something sweet, and I have a feeling that if I can harness enough self control, I can get away with just eating one. And they will perfectly satisfy my sweet tooth. Or they make a good party favor. Or they make a great topping to ice cream. Or you could make dessert skewers with a cookie dough ball, a marshmallow, a caramel, a strawberry, etc. The ideas are pretty endless. What will you make with yours, I wonder?
Freezer Cookie Dough Bites Recipe
1 Stick Unsalted Butter
1/2 Cup Sugar
1/2 Cup Light Brown Sugar
1 tsp. Vanilla Extract
2 Tbsp. egg substitute (I used mayonnaise, trust me it worked- or you can use sour cream, Greek yogurt, or even applesauce)
1/2 tsp. Salt
1 Cup Flour
1 Cup Chocolate Chips
*optional additions are 1/2 cup sweetened coconut, 1/2 cup oatmeal, or 1/2 cup pecans
First, cover a plate with foil. Your freezer cookie dough bites will come off easily if you put them on a foil-covered plate, and while you can use whatever size dish fits into your freezer, mine only accommodates a dinner plate.
Combine the first 3 ingredients in a standing mixer or in a large bowl and mix for about a minute, then slowly add the vanilla, the egg substitute, and the dry ingredients. Try and make a small dough ball out of the dough, and if it feels too sticky, add a tablespoon of flour at a time until the consistency is thicker.
You want to be able to roll the little dough balls in your palms, about the size of a whopper candy or a small marshmallow. Place the dough balls on the foil-lined plate and freeze them for at least 4 hours with saran wrap over the top. If you plan on using them that day, only take them out about thirty minutes before you use. But if you’re wanting to keep them as an on-hand sweet treat, simply take them off the plate, stick them in a plastic baggy, and keep them in the freezer for whenever you need a bite!
Like I said, I like to eat mine with frozen yogurt… and maybe some chocolate syrup. Yum.
