Everyone seems to be in transition right now. Kids are heading back to school, my instagram feed is full of pictures of Bento box lunch pails and the latest backpack trends, chalkboards that read, "First day of..." and uncluttered playrooms. The gym childcare is now cleared out of the big kids and now overflowing with all the toddlers left behind by their older siblings, and sadly, our neighborhood pool is closing. Supermarkets are getting decorated with pumpkins and ghoulish Halloween gear, cinnamon brooms and mums. And naturally, Indiana decided now would be a good time to feel like summer, for the first time all summer. What the heehaw? Now begins the confusing weather patterns, and the teasing of fall. Rosemary Sweet Potatoes Recipe
Sweet potatoes are a healthy and delicious favorite, year round, in our house. This Rosemary Sweet Potatoes Recipe is a unique alternative to the normal holiday recipes. Rosemary Sweet Potatoes Recipe Ingredients: 4 Large Sweet Potatoes 3 cups Extra Virgin Olive Oil 5 Tablespoons of Fresh Rosemary, minced Sea Salt Directions: Wash, peel and cut sweet potatoes. Slice sweet potatoes into slices roughly a quarter of an inch thick. Place sliced potatoes on paper towels and sprinkle well with sea salt. In a large Ziploc bag, mix 3 cups of extra virgin olive oil with minced rosemary. Add the sweet potatoes to the bag of olive oil and rosemary and allow to set for a few hours. Pumpkin is a staple for many fall recipes, and this Pumpkin Pecan Bar recipe is a delicious dessert that is easy enough to make for a pot luck and yummy enough to feel confident in an empty serving dish! Pumpkin Pecan Bars Ingredients: 2 cups sugar 2 cups Bisquick 1- 15 oz. can of pumpkin 1/2 cup oil 4 eggs ¼ cup of golden raisins 2 teaspoon cinnamon 1/2 cup pecans, roughly chopped Frosting Ingredients: 4 oz. Cream Cheese 1 t. Vanilla 2 C. Powdered Sugar 3/4 Stick of Margarine Directions: 1. In a mixing bowl, mix pumpkin, sugar and oil together with a hand mixer on medium speed for roughly 4 minutes. 2. Gradually add the Bisquick, raisins and cinnamon to the mixture (it will have lumps in it), set aside. 3. Prepare a jellyroll pan and pour the batter in it. 4. Bake for 20 minutes at 350 degrees.
